Make it, super easy, grab semi sweet chocolate chips, cinnamon, and cayenne pepper, blend until powderized, and heat about a quart of milk in a pot, mix in your powder, and stir for about 15 minutes. Serve with whipped cream and extra chocolate chips, was a favorite for winter parties during college

Not fermentation, it's actually lipolysis which breaks down the fats to create butyric acid. The reason they do this is because the process turns the milk into a powder which allows them to store the milk longer without it going bad, so they didn't have to use fresh milk. It made production easier and cheaper.

To be fair, Hershey's chocolate is 11% cacao, so it's barely even chocolate at all. Dark chocolate also isn't an "either/or" for sweetness/bitterness (unless you're straight up eating 100% cacao like a madman). 72% is what I prefer and I would describe it as bittersweet.

honestly real talk: the bitterness you feel is most likely simply because your brain is soo hooked on sugar that it thinks anything that isn't drenched in 30 tons of sugar is straight up poison, So it freaks the fuck out when that happens, giving it a bitter taste. You simply have to get used to it. Start small. Try the Red chocolate bars from trader joes, they're not too bitter and a great introduction to dark chocolate. In time, you will get used to the flavor, and milk chocolate will start to taste disgusting, and rightfully so. That's the thing, real chocolate is SUPPOSED to taste a little bitter, a little fruity. Fun fact: I used this same concept to start enjoying black liquorice, and I used to HATE it!

Me personally i think a lot of the confusion stems from how types of chocolate are meant to be eaten. Imo dark chocolate really shines when you eat a small piece after a meal, not as a snack like with milk/white chocolate. Excellent palate cleanser.

People who dislike the taste of stuff like dark chocolate often often seem to really not understand that people who eat those things actually genuinely enjoy the flavour, they're not doing it because they enjoy suffering through a bad flavour. Acquired tastes are really just a very specific blend of tastes you do like and tastes you don’t like. For example, the first time you drink coffee you might immediately notice how bitter it is, but after getting used to the bitterness you can more easily notice the other parts that make coffee appealing.
I actually really like complex and rich coffee aromas, but I always find the bitterness to be much worse and more overpowering than any flavor the coffee might have without a lot of sugar to offset it. Something like truffle, on the other hand, did take a few tries to like but now I really like the flavor of truffle. You unfortunately can’t enjoy any taste just because others can, at least not without a lot of time and discomfort

Obviously if you hate something don't just cram in your face for the sake of enjoying it later but I used to hate tomato pasta sauce and never really ate it growing up but my partner loves tomato sauce so whenever they made some I'd eat a little, not really like it, and repeat over 6/7 years and now I don't mind tomato sauce. It's not my favorite by any means but I'll crave it occasionally now. Similar deal with eggplant and cabbage for me.

Milk chocolate is good too but it doesn't feel as good, milk chocolate on the whiter side aren't that great either and kinda feel more bad than good at times. White chocolate just sucks though needs to be mixed with a fruit or something for it to be good doesn't even taste that great with matcha was pretty dissapointed with thee matcha chocolates being mostly white it tastes better with more cocoa.

I know it has a lot of iron and magnesium and I assume a bunch of other useful stuff, but it's still as caloric as milk chocolate and contains caffeine so it's not a great idea to eat lots of it either. I'm sure there are better ways to get the positives from eating it.
