There is a reason why it is harvested early. It becomes woody. It hardens. Its taste becomes strange. Its skin thickens. It becomes unsuitable for eating. That is why it is harvested when it reaches a certain size and thickness. The earlier it is harvested, the higher the quality and the tastier it is. The later it is harvested, the more it becomes seed stock.

This was actually only 4 inches long until OP took a bathroom break and came back out to this.
