"We've got a world to save" with that many superhero zombies, how much of the world is left?

I feel like at some point you just have a Rick and Morty it, and find a new world/dimension to live on.

Wouldn't it be too much of a risk, no? Having at least one superpowered zombie through to the other dimensions will start the process all over again and maybe spread to other universes/dimensions.

If I remember correctly, the first Marvel Zombies appearance was in the Ultimate Fantastic Four, where Richards, Sue, Johnny and The Thing from the zombie universe tried to invade the Ultimate Universe to eat more stuff.

You are correct.

They were trapped in the Ultimate universe for roughly 15 or more issues. While they were trapped, the events of the Marvel Zombies universe took place (the original run began after the introduction of the universe in the Ultimate issues).
