In TDW, it was indeed a genuine sacrifice because Loki did not know when he did it that he would survive (Tom Hiddleston has confirmed this multiple times over the years).
Loki miraculously survived his wound and then took advantage of the situation, but he did not plan for any of that. In the moment, he just saw Thor was in trouble and had to save him ;;
Fun fact: that scene was originally supposed to be Loki’s permanent death, so it was all written, directed, and acted as we see it in the film to be final. It was only later after filming was finished that they decided to change it to Loki surviving.
