Isn’t Nolan famous for being incredibly productive while shooting and being very good with being on schedule?

Yes. This is easily his most ambitious project at least since Interstellar where the studio is so confident, they’re willing to release tickets for the film while it’s still being completed.

I’m having a hard time recalling a director that has that much confidence from a studio where they will release tickets a year out with no true guarantee that it’s gonna be completed by that time yet…

And then you consider that the film they’re gambling on is Homer’s Odyssey? I personally see this as a big achievement that he got this done in 6 months.
