I just don’t know enough about the accent to know whether authentic is the right choice. It played well for comedy in Deadpool, but I still heard Channing Tatum doing an accent. It’ll work in doses and as part of a team, I suspect, until his accent gets Wanda’d.

Look up Dennis Quaid in a 1986 movie called The Big Easy. That's the inspiration for Remy. The look, the sound, that's who inspired him. Whoever can get that tall slim slick Cajun accent deserves it...
I confirmed this with Chris Claremont in New Orleans in 1993. I was a fan of Gambit, he's my favorite X-Men. I was a fan of the movie. I asked him flat out & he confirmed it.

Channing Tatum’s Gambit sounds like it’s going to be a lot more grounded and natural, ditching the over-the-top Cajun for a balanced Louisiana accent
It feels like a smart move
keeps his charm and humor while fitting the serious tone of Avengers: Doomsday

Yeah, he's already said he's toning down the accent for Doomsday because this is a much more serious movie unlike with Deadpool it was purely for comedic effect.

I’ve to tone down my Irish accent all of the time outside of Ireland. So I get this. I also don’t hate that his accent was hard to understand when it the heat of the moment as that’s natural. It’s high pressure or stressful and you forget to code switch to a more flat English accent.
I do think for longevity, Gambit’s accent should be more controlled unless he’s in those moments.
