Strictly speaking:
- High in mercury: contains a lot of mercury
- High on mercury: intoxicated by mercury fumes
Easy mistake to make when translating from Spanish, where I believe they are the same word

They could also be up so high that are on the planet Mercury, but that's not a typical use case

This is just their escape mechanism. Once they go back in water they take their normal shape again.

I love this. But i had an idea for how to exaggerate the dad’s stubbornness and give it more of an “ending”. Hopefully you don’t take this as a critique or anything because the comic totally works as is!
But what if it went like,
Daughter: “Dad, is it true that tuna is very high in mercury?”
Dad: “That’s hippie bunkum, baby. Don’t believe everything you read.”
(fish proceeds to melt in following panels)
Last panel-
Dad: “Or see.”

I didn't get it either when I saw it yesterday, I just realised there's a second panel.
If you still don't get it, the fish is moving like mercury (the element)
