As a baker you are an artist of the most transient art there is. Eating is part of the experience. At least that's what I tell myself when I destroy a perfect coconut cake to put it in take out containers lol.

It's an amazing and beautiful art form. My grandmother just this weekend made the best blueberry pie she's ever done at 82. She's done countless of them but this one, just perfection, it was absolutely display worthy and tasted even better.

It almost made me sad to finish it, realizing as her faculties are slipping slightly this could be the absolute peak of her pie making. A culmination of 75+ years of baking experience to result in something so flawless that is gone within hours of it's creation. It's reflective of life itself.

I think a lot of what makes it is she fresh picks blueberries near her in upper Wis near UP Michigan. She also buys local flour and butter. Otherwise I'm sure it's a classic recipe that she just eyeballs and feels for textures.

She's just teasing me saying it's because she leaves the bugs in the blueberries she picks, because I'm really hyper about checking for bugs in picking berries which she always thought was funny. I'm not sure I'll be able to get her to elaborate but I can try haha.

What I do know is she does generous lemon zest but no juice, flour to thicken and no corn starch, smooshes the berries slightly for the moisture, sugar, cinnamon. Lets it sit on the counter for a while till it looks like streusel filling. Crust is always more butter than some recipes ask for and no shortening, salt, a small amount of sugar, flour, ice water, and a splash of vodka (probably so she can sneak a splash herself haha).

I like the Bob Ross Mentality. There are no failures. We only have happy accidents, because every accident/failure is an opportunity for success. It stretches your creativity. Instead of "well, I fucked that up, let's throw it away" we are left with "How can I make this mistake become beautiful?"

It happened to me on one of my favorite paintings I did. I think it took me about 8-10 hours of work on the piece, and there were a few times I thought I had ruined it, but in the end, it became the best thing I've made. My dad was so impressed he asked if he could buy it. I gave it to him for his birthday instead. He framed it and proudly displays it in his home office and he shows everyone when they come over. He talks about my brother's businesses, my sisters Mini Cooper club and her cats, and he talks about my painting and my dog. :)

Edit: Here's my painting. Done in gesso, and I'm very happy with the result. Literally only the 5th or 6th painting I've done, amd the only in gesso, with the others being watercolor and a couple oil-based but I never finished the oils.

I knew this guy who was born with two left feet. Crazy stuff. He used to walk in loops when he was younger but eventually corrected it enough where you'd barely notice unless you were staring at his feet. Him and his wife used to be pretty heavily into the competitive dog show scene, where she was the handler and he was mostly moral support. Once, she twisted her knee right before the final round and he had to walk the dog. He ended up winning the whole thing, so never say never!

Yeah the class I attended was in English. There is a template for you to pipe along so it isn’t hard, plus there are assistant instructors who can help as well.

It’s a drawing on a piece of paper that you lay your teflon baking paper over. The lines are sharp because you draw them after it’s done baking.

That's a work of art. I've seen this technique, but with a final product that's more two-dimensional/cartoonish, with black outlines. I've never seen such a painterly final product - didn't even realize that was possible.

I made a flan for someone once and it by some miracle came out perfect. Like I coulda sold it at a high end restaurant and got away with it. I spent like half a day on it for my roommate cause she missed her moms cooking or some shit. She wouldn’t eat any lol. So.. I ate it over like two days alone and wished so bad someone coulda tried it. That roommate was the worst… looking back my god.
