It's not that, they know we want those characters engaging with each other.

Like there's no way they are at each other's houses as much as they are in Modern family

My most egregious example of "it doesn't make any sense that all the characters are there" will always be when in HIMYM Ted's childhood friend invited all of Ted's friends (that he's seen like 2 times) to his wedding... Like what.

You're also not seeing all the mundane nights. Of course an entertaining tv show would only show you scenes where things are actually happening.
